Roasted Carrot Coins



Need more veggies in your life? Make a batch of these and you’ll be full of beta carotene and fiber before you know it.


6 carrots

2 tablespoon coconut oil, melted

1 T cinnamon

Salt and pepper to taste


Slice carrots in 1/4 inch thick coins, place in a large bowl & toss with melted coconut oil.

Sprinkle cinnamon and salt and pepper then mix until well coated.

Spread in a single layer on a baking sheet and roast for 25 – 30 min or longer, until tender & slightly browned.
